Wild Herb Salad.
Pick handfuls of Sorrel; parsley;mint; basil;rocket and mixed lettuce. Any thing edible that you have in your garden.
Slice with a scissors (less dangerous and messy) Add sliced red Bell Peppers; chopped red onion and nasturtium leaves, chop Celery leaves and stalks; cubed Tomatoes and Capers. Decorate with Nasturtium flowers.
Dressing is 1/2 and 1/2 of Cronola oil (Olive oil doesn't mix that well) and Balsamic Vinegar. Tblsp Honey and seasoning and plenty of Garlic. ( you can add any green in your garden)
Another tip- never through away Gherkin or pickling juice add it to a dressing base. Vinegar helps Diabetics for some reason.
Spinach Salad.
Handfuls of fresh young garden spinach ; wash and cut with scissors. Toss in a bowl with sliced Olives; mushrooms; tomatoes anything suitable from your garden or pantry. Sprinkle with Olive oil ; Balsamic Vinegar and garlic.
When my sister was dying of Liver Cancer she was not allowed oil so Balsamic Vinegar was her dressing. It is quite palatable .
