Fruit Muffins

Fruit Muffins.
3 x apples; or Bananas or any fruit in season. Peel and dice. place into bowl add-
3/4 cups of brown sugar; 2 eggs beaten; 1/2 cup oil; 1 tsp vanilla essence; 1 c flour; 1 c wholemeal flour; 3/4 tsp baking soda (dissolved in a drop of water). 1 tsp baking pwd; 1 tsp cinnamon; 1/c raisins; 1/4 c chopped nuts.
Mix and spooned into greased muffin trays Bake for 25-30 mins on 150 in oven. Makes 12 large muffins.
Muffins can be frozen.

Easy Fruit Cake

Easy Fruit Cake.
Soak over night- 2 k of mixed fruit in a bowl with 2 cups of fruit juice. Stir now and then.
Add 2 cups of flour place in a greased Cake tin and cook on a middle to low rack at 150 for about 2 hours. Make sure the top doesn't burn. Check with a skewer. (For Christmas add Grog)
Can also use this recipe for muffins.

Mexican Meat Loaf

Mexican Meat Loaf.
Mix 500g of mince; 1 cup of rolled oats (great to make mince go further) ; 1 egg; 1 large chopped onion; loads of garlic; a good dash of sweet chilli sauce; a good dash of soy sauce; salt and pepper; 2-3 tsp of cummin; 1/4 tsp of cayenne pepper; tsp of beef stock.
Place in a greased loaf tin; sprinkle with grated cheese and bake at 180 for about an hour. Test with a wooded skewer to see if its cooked through.
Can be baked in a microwave (if in a microwave dish) med-high for 15 mins

Quick Quiche

Quick Quiche.
Whisk 4 eggs add one +1/2 c of milk. (I use dry pwd milk and water) 1 tbsp oil; 4 rashers of chopped bacon or bacon pieces; 1 diced onion; chopped parsley; 1 cup of grated cheese ( a packet of cheese sauce is more economical) 2 tsp baking pwd; 1 cup of self raising flour and mix.
Add celery, corgette; any vegetable you may have. Or salmon or tuna.(without the Bacon).
Pour into a greased Quiche dish.
Top with sliced tomato and a grated cheese. Sprinkle Paprika on top.
This can be cooked in the can be in a Micro wave or bake for 30 mins in an oven at 180.

SIMPLE TIPS AND REMEDIES

SIMPLE TIPS AND REMEDIES.
(Need to know if you are out bush or in the Country)
Bites and Stings;
Bee stings-Scrape and remove the sac and sting with a sharp knife.
Apply old fashioned Blue Bag (which I salvages from mum's laundry since I'm allergic) or Baking Soda.
Wasp bites- apply Vinegar.
White Tail Spider- apply Jonola/Bleach. (It's the vermin it carries thats the problem) When I got bitten I applied everything going plus ant-hystermines (sp). It seemed to work.
Cuts- if you need to hold the mending until you get to the Doctor, apply the inner white skin under the shell of a boiled egg or a cobweb. Mum applied pepper to mine. It work but stung like hell and by the time I got to the doctor it had set like concrete.

Kitchen use
Baking Soda for cleaning anything. If you have a burnt saucepan pour in a little water and a teaspoon of baking soda and bring to the boil. The black should lift without scrubbing or ruin the pot.
Run out of Dish washing liquid. Use Sunlight Soap in a soap shaker or in a small bowl under the running water or for laundry grate the soap.
Wiping benches use diluted Detol or Vinegar which is a disinfectant.
Also Vinegar and newspaper with water for cleaning glass windows.
For cleaning silver- place a sheet of tin foil and a tsp salt in boiling hot water in a basin. Place your silver inside and walk away. Come back later and they should wipe shiny and clean.

Bathrooms- Never use a hard abrasive of any make on you bath or hand basin. Wipe after a bath with ends of soap in the plastic netting they sell Kiwi Fruit in. Once a month wipe with kerosene it helps to restore the protective layer.
Toilets- clean with Baking soda or a recommended bio-gradable . In town Jonola or bleach.

Dusting- dust with a paint brush it gets into the cracks. Then wipe with a damp cloth.
never ever shake a mat it backs the backing of the rug.

Garden Hints.- Snails hate salt and coffee grinds, also stale beer left in a can or tin will catch them.
Salt- will kill weeds in the path and is much more friendlier to animals. (hedgehogs may need lots of water afterNever found out.)
Always put snail bait in jars or tins so animals and birds can't get at it.
Place old wire netting on the garden before planting , this stops the cats and chooks from scratching up your plants.

(I will do more research and come back to this project. But these are the things that have been handed down to me.

NZ Pavlova

NZ Pavlova.
Preheat oven to 150 c
place 3 egg whites in a bowl and beat until stiff ( a pinch of salt always helps to beat eggs from a fridge)
Gradually ad 1 cup of caster sugar and 3 tbsp water; 1tsp of malt vinegar; 1tsp vanilla essence and 3 teaspoons of Cornflour (mum used Custard pwd once and the marshmellow was yellow).
Keep beating until the mixture stands in stiff peaks. Put baking paper on a large plate(Yes you read me right this stops the meringue from crumbling when shifted).
Spread the mixture into a circular shape and even as possible (about 2 inches thick) What I've seen on UK cooking shows they are far too skinny)
Bake Pavlova for 45 minutes. Then leave to cool in the oven. Remove (already on the serving plate) when cool add Whipped cream and sliced fruit or Strawberries to decorate. Enjoy

Banana and Red Onion Salad

Banana and Red Onion Salad.
Slice equal parts of Red Onion to equal amount Banana.
Cover in Mayonnaise made form a tin of Condense Milk and a tsp dried Mustard. add a little Malt Vinegar till it thickens OR Home made Mayonnaise with 1 egg, 1 tsp of Dried Mustard a tin or bottle of creme, a little sugar to taste and a little vinegar. Boil in a saucepan on the stove till it thickens . Add to Banana and Onion

Fruit and Muesli

Fruit and Muesli.
3-4 cups of Oatmeal; 1/4 cup each of chopped nuts;dried Apricots; prunes; figs;raisins; dates; pineapple any dried fruit you can afford or have in the pantry. ( Bulk Bin Shops are great as you can measure what you need) Store in a large Jar/ container.
When you want to use it for breakfast; use a scoop ( I save the washing powder scoops) to place in a bowl. Slice an in season raw fruit on top, trickle honey over the Muesli and eat with Home made Yoghurt.
No child should go to school hungry as Oat meal is so cheap.

( What some people do not know that there is a difference between High Fibre and Roughage) Well my and sister didn't. She was always on a diet eating Rabbit food since this High Fibre diet it came out. We were taught Bread was fattening. It's what you put on it that is fattening. In Europe they use their bread to soak up their gravy and sauces. They don't eat toast.
Oatmeal is another excellent Roughage that lowers cholesterol. I will give you a Raw muesli recipe later that We were taught while studying at The Christine Shaw of Old Bond street in London . Beauty Therapy also covered Diet and Modeling . Some people think because they are fit and slim they eat healthy. But as Jamie Oliver proved they could contain fat around their organs. there are also skinny Diabetics My Nana and Father were skinny Diabetics.
We are what we eat. And we don't go back for second helping because we are hungry- it's because it tasted so dam good.
Fibre passes through you like a dose of salts- Roughage takes it's time and is more bulky and sweeps the sides of your Colon. This is so important for good health. And water is another important factor (not Tea , Coffee and Pop)

Pumpkin and Sunflower seed wholemeal bread
(this will get you moving)

In this order place into a bowl or Bread maker Bin.
310 ml of warm water; 1tsp salt;1 1/2 tablsp oil; 1 1/2 tbsp dry milk pwd; Handful of each Pumpkin seeds; sunflower seeds. Tbspn of Linseed.(more on this later) 1/4 cup of Bran. 1 1/2 cups each of wholemeal flour and High Grade flour. Then 2 1/2 tablsp sugar and 1 1/2 tsp of bread yeast. This makes a 1.5lb /750g loaf. Bake in a Bread Maker or Knead and let rise and make the old way.

Linseed is now missing from our food as it use to grow amongst the wheat fields so now has to be replaced into the Modern diet..
